Ginger Garlic Chicken

Ingredients I use for the glaze

  • 2 tablespoons minced ginger
  • 1 shallot, sliced fine
  • 3 cloves of fresh garlic minced
  • 1 cup Vietnamese soy sauce (Butterfly sauce)
  • 1/2 cup honey
  • 1 Tbsp. Mirin
  • 1/4 cold water
  • Juice of half a lime, you can use 1 full lime
  • 2 tablespoons canola oil
  • Kosher salt and freshly ground black pepper to taste

How I made this

In a saucepan over medium heat coated lightly with oil, combine garlic, ginger and scallions and season very lightly with salt and pepper and cook until softened. Add the Butterfly soy sauce, honey, water and lime juice. Bring to a simmer and let mixture reduce about a quarter to a syrup consistency, about 10-15 minutes. I let it cool.

I use this on Chicken and Pork mostly

I simply tossed the peppers and Peaches in Extra Virgin Oil and salt and pepper and grill until slightly softened.
