Ingredients:

  • 3 large egg
  • 2 – extra egg yokes
  •  2.5 cups of flour
  •  Pinch of Kosher salt
  • 1 table spoon of Olive Oil
  •  A little water for mixing if needed

Directions:

  • Place the flour in a bowl or on your counter top, create a “well” shape in the middle of the flour
  • Add the eggs
  • Add a pinch of salt
  • Add a drizzle of Olive oil
  • Lightly mix the eggs into the flour by gently stirring with a fork
  • Once the eggs are starting to blend with the flour, use your hands to mix/need the mixture
  • Continue to mix until it becomes a dough like texture
  • Cover and leave sit for 30 minutes or more
  • You can shape the dough depending on what type of pasta you would like
