Ingredients I used Teriyaki sauce

  • 1 cup soy sauce
  • 2 tbsp. of brown sugar
  • 3 tbsp. of honey
  • 1 tbsp. of mirin
  • 1 quarter of a white onion (finely diced)
  • 4-5 cloves of garlic, minced
  • 1 tablespoons sesame oil
  • 2 tsp of corn starch
  • Cracked black pepper, to taste
  • Black and white sesame seeds (toasted)

Additional Ingredients

  • 1 fillet of fresh Sockeye Salmon
2 table spoons of canola oil

How I make it

I incorporated all ingredients for the teriyaki sauce in a sauce pan and simmered on medium heat  for about 20-30 minutes until reduced and thickened. I sliced the salmon in smaller pieces, against the grain, similar to Japanese nigiri. Added oil to a frying pan on medium heat and cooked salmon for 1 minute per side. I brushed the teriyaki sauce on the Salmon, reduced to low heat and cooked for another 1-2 minutes on each side.I brushed the salmon again with the teriyaki just before serving and added black and white sesame seeds for garnish. I always serve the salmon with Jasmine rice.

Enjoy!
