Pork Ribs with Vietnamese Spices

  • 2 tablespoons of honey
  • 3 pounds spare ribs, cut into individual sections
  • Kosher salt to taste
  • 1 tablespoon nuoc mam (fish sauce)
  • Black pepper to taste
  • 175 ml of Hoisin sauce
  • 3 table spoons of Vietnamese soya sauce (You can use any other low sodium soya sauce if you do not have Vietnamese soya)
  • 7 garlic cloves, crushed
  • 3 table spoons fresh ginger root
  • 1 small white onion
  • Bon Bo Hue spice
  • Fresh chopped Pineapple


Clean and wash the spare ribs and boil for about 15 minutes, boiling is optional for reduced fat. Heat all ingredients in a small saucepan and bring to simmer, then add your chopped pineapple. In a large pan/roasting pan or frying pan, add the ribs and your sauce to the pan. Partially cover the pot and simmer on medium-low heat while stirring the sauce and the meat together Place in an oven at 350 degrees for 45 – 60 minutes or until pork is tender. Continue to stir the sauce during the cooking process. Serve with rice or just tumble onto a plate and garnish with fresh Cilantro or scallions and sesame seeds
